Mimosa Tree (albizzia Julbrissin) Anyone have a flower recipe?

The flowers from this tree are very fragrant. All the research I did leads me to think I could use them. Just wondering if anyone tried them or saw a recipe.
I'd like to use them for a wine or in my next mead (I don't remember what you call it then!).
It's a fun hobby - and the rewards are staggering.
