Hi i am doing a racking of Pinor Noir just prior to bottleing.. During siphoning from carboys, do I let the hose hit the wine of the other carboy to airate it, or keep it on the bottom or side of the carboy to prevent airation? I cant remember when to do this airation technique either racking off of gross lees or storage racking

Basically I remember that racking off the gross lees ur supposed to either let the siphon hose hit the top of the wine of the new carboy thus creating bubbles and than long term rackings u not supposed to airate it and make sure the siphon hose hits the bottom of the carboy as air would be bad at this step.. or is is vice versa.. or i am totally wrong.. thanks for u help

Aeration should be avoided except in two cases; to help stop a stinky ferment and to get macro amounts of O2 to a wine that needs it. 99.999% of the wine made at home does not need the latter.

Pretty much always put your racking cane near the bottom of your carboy to fill from the bottom up to reduce extra O2 infusion from splashing the wine into the carboy from the top. There are exceptions, like gregorio says, but rule of thumb is like we'd stated.
