SO if I take the organic milk I find in my area and let it settle then skim off more cream off the top and adding it to another batch will I gain a richer cheeze in the end? Am I answering my own question? lol

Of course, you will be rising the fat content considerably. Its hard to say by how much but with most recipes you will find a note regarding "cream addition" to say making a very rich creamy stilton or tripple cream brie.
My advice may or may not be backed by actually personal expirience and should be treated as such. :)
