Part 2 of my question: What's a good yeast for sauvignon blanc? I'm looking at M&M's offerings (frozen juice probably). More of a crisp style, no oak or MLF.

Go to morewinemaking.com. They repackage most of Lallemand's lineup into smaller 8g lots.

I've used K1-V1116, VL3, R2 and Cote de Blancs (aka Epernay II) and would have to say I liked most of them. VL3 can really accentuate classic SB aromas (almost to a fault) while the rest produce very clean and fruity whites. The most fool-proof of the bunch is K1-V1116 and the most finicky are R2 and VL3 (high nitrogen demands, H2S production if not happy).
Clarified juice is often a bit nutrient deficient so make sure you go a little heavier on the nutrients especially if using a high nitrogen demanding yeast. Good luck!

For Sauvignon Blanc, I think D47 or QA23 are good choices.

so far just d254 and AMH, just got my first Alpha MLF, thou it is 2.5 G instead of 1G
