I'm looking for some more info (for a friend) on the typical equipment a small commercial winery would use. I see a ton of information on various sizes and types of crusher/destemmers, but the only presses I ever see are the small home winemaking variety. Can someone enlighten me what these commercial wineries use for presses? I can't imagine them doing thousands of lbs of grapes in a giant basket press with a big rachet. Do they go the bladder press route?

If you're looking for the big industrial size stuff, do a Google search on "pneumatic wine press" or "membrane wine press".
