I'm going to be making wine from Walker's juice--5 gals of pinot gris. It's the first outside of a kit that I've done. I'm wondering about the best yeast to use to bring out the delicate flavors/aromas. I'm planning on a cool ferment in my basement. I was considering getting some Fermaid-K and Go-Ferm to help with fermentation. Any suggestions?

D47 usually is good for all fruity crip whites.
