I have 30 Champourcin vines that I planted this spring and to my surprise I have some fruit already. I have been monitoring the Brix and it seems like it has kind of stopped at 17.5. It has not increased in the last 10 days. I know that the brix is too low to make wine and that if I picked now I would have to add some sugar which I would prefer to avoid. So my question is should I wait longer ...
