wine a lot

I just started making wine a couple months ago. This forum has taught me soo much in this short time. Thanks for being here.
I know I'll need your help sooner rather than later. I'll post pictures of my current projects soon.

I have 30 Champourcin vines that I planted this spring and to my surprise I have some fruit already. I have been monitoring the Brix and it seems like it has kind of stopped at 17.5. It has not increased in the last 10 days. I know that the brix is too low to make wine and that if I picked now I would have to add some sugar which I would prefer to avoid. So my question is should I wait longer ...

I saw an old post where you said you had an oil free aspirator with guage and regulator. Where did you find that? I have a vac pump but when it needs replacing I'd rather go with oil free (since the oil one puts out some smoke). Thought I'd ask now and just keep the info till I need it.
