'Twas the night before crush, when all through the house, Not a creature was stirring, well, except the winemaker who was fretting like a mouse. The refractometer was cleaned and calibrated with care, with the hopes that the brix levels would be close to "there." Merry Crush-mass!

  • Hello David: After years of using a basket press, I purchased a Speidel 20l bladder press and used it for the first time yesterday. I found the instructions that came with the press a bit vague and had to do my own research which led me to your post from 16 October 2012 on this site. I have been making my own wine for over twenty years, but with my new press I felt like a beginner. If I may ask you a few questions:
    Is the pressure supposed to stay constant? I would allow the pressure...

Thanks. I have been making wine about 1 year now. I have made 4 of my own batches and getting ready to start 4-6 more here soon.
I have done rhubarb, concord, skeeter pee, and Cherry so far. I have had good luck. Now to perfect and better document my recipes.
